This massive Minotaur is one of many Vex set to guard their Gates. As a Gate Lord, it is stronger and far more durable than the typical Minotaur. In addition it has added armaments which make it much more a threat.
Like any Vex, the white light in the center of its torso is its weak point.
When it comes to fighting Zydron, there are a few phases. The first phase is a simple duel between the Guardian(s) and it. When it is has lost loosely a fifth of its health, it will call in reinforcements. This starts the second phase of the fight. It will do this again when it is around the half health mark or the 3/4 gone mark. Each is its own creature to deal with because of the locations of the enemies that appear.

If you are having trouble with Zydron here are a few tips:
First, duck out of its line of fire as quickly as you can. Just behind the circle, to the right, you can get some decent cover. You can also head over to the left and hide behind the pillar. Either way, use this cover to attack this massive target. At least for the first parts of the fight.
When things get more intense, you need a different tactic to survive. Jump over either side of the stairs and land on the ledge below you. Be careful doing this on the right-hand side of the gate as you can fall down into a canyon. Head down to the base of the steps. Start going up them until you can see the Gatelord. From there, work to snipe him from a distance. You can also go move the left-side side of the steps, along the ground. Look to the right as you do this. There is a slope that leads up to the landing in front of the portal. You can clear out some of the additional Vex and get in some sneak shots on Zydron.
