Potato is a food in Skyrim. Eat it to restore a small amount of health. You can harvest potatoes from Potato Plants across Skyrim, for example in the Snow-Shod Farm.
Some NPCs, for example Addvild, will pay a little gold if you sell potatoes to them.
Potato is also one of the ingredients to cook Vegetable Soup
